1. Turkey tail
The distinctively-striped turkey tail fungus grows on stumps and logs all over the forests of the northern hemisphere. It is, in fact, probably the most common species you will find. That doesn't mean this mushroom is plain, however; each cap is uniquely patterned. Look for bands of alternating textures as well as color.
2. Amanita caesareoides
Amanita caesareoides closely resembles its relative Amanita jacksonii, except that the spores have a different shape. The bright reddish-orange caps are commonly featured in various illustrations in Chinese, Korean, and Japanese literature. Amanita caesareoides thrives in beech forests growing in damp soil.
3. Artist's conk
This shelf fungus can live for several consecutive years and can be dated by the growth ridges seen on its dark surface. Artist's conk grows in tiered groups at the bases of oak, beech, and conifers, as well as deadwood. When its spores release, they cover the area with visible brown dust. Scratches in the white undersurface create dark lines.
4. Southern cinnabar polypore
Southern cinnabar polypore grows in a variety of contexts, though it prefers to grow on deadwood near open water sources. This mushroom fruits from the late summer to early winter. True to its name, young southern cinnabar polypore has a bright orange color that's similar to cinnabar but may fade in older age.
5. Fly agaric
In Northern Asia and Europe, fly agaric grows under trees near the winter solstice and is collected for ritual use tied to the season. Its characteristic shape and coloring are still ubiquitous in many European fairy tale illustrations and Christmas traditions. It is highly toxic.
6. Veiled polypore
If you've ever gone on a walk through the woods where dead conifers are present, there's a good chance you've seen a veiled polypore. The fungus' name comes from the fact that it's pores are "veiled" by a rounded piece of tissue. Indeed, rather than growing in sheet-like formations like other polypores, the veiled polypore can be nearly spherical. These mushrooms are especially prevalent in pine stands that have been ravaged by fire or beetles.
7. Fairy inkcap
The mushrooms of the fairy inkcap species have a tendency to congregate in large masses over dead tree stumps and decaying roots. They appear all around the world from early spring all the way to the first frosts, but each fruit only lasts a few days before turning black and distributing its spores.
8. False turkey-tail
A common woodland fungus found across North America, the false turkey-tail thrives in wet environs and can be found in copious quantities on decaying wood. The species is so-called because it looks similar the also-common Turkey Tail (Tremetes versicolor) - both species grow in thin, roughly semi-circular sheets. False turkey-tails have tough, woody bodies and are considered to be inedible.
9. Daedaleopsis tricolor
Daedaleopsis tricolor is similar in appearance to the Turkeytail mushroom, except for its multi-zoned gills that easily set it apart. The gills gradually turn from white to brown as the mushroom ages. It thrives in hardwood forests, especially woodlands with willow trees.
10. Enoki
The enoki grows wild on dead elm trees, and is also cultivated for human use. This flavorful species (Flammulina velutipes) has been used in dishes around the world for generations, being particularly high in nutrients. Though store-bought enoki are often plain white, wild ones can be found in a range of colors.
